The story

Yuca (cassava) has fed South America for over 8,000 years: the root comes from the Amazon basin and was a staple food long before the Incas built their empire. Fried golden and crisp on the outside, soft within, here it meets Peru's most famous sauce — huancaína made from ají amarillo and fresh cheese.
