The story
A monument of Afro-Peruvian cooking: in colonial kitchens, African cooks transformed yesterday's leftovers — rice and beans — into a golden pan-fried cake. The name likely traces back to the Quechua word 'takuy' (to mix). Thrift became cult: today tacu tacu is at home everywhere in Peru, from the simple fonda to the gourmet restaurant.
