The story

Peru's most-eaten dish — invented by a Swiss: Roger Schuler, a chicken farmer near Lima, developed a rotating charcoal grill in 1950 with metalworker Franz Ulrich and served chicken at his 'Granja Azul' so good that Peru elevated it to national-dish status — official holiday included: the Día del Pollo a la Brasa on the third Sunday of July. The secret: the spiced marinade and the slow rotation. Caramelised outside, juicy within.
