The story
A tribute to the cevicherías of Lima: there you do not order a dish, you experience the ocean in all its forms — raw and marinated (ceviche), crisply fried (jalea), wok-fried with Chinese Chifa heritage (arroz chaufa), layered cold (causa) and tossed in garlic (al ajillo). Our Plate del Mar unites these five traditions on one plate. All of it made possible by the Humboldt Current off Peru's coast — one of the richest fishing waters on earth.
