The story

The 'wild potatoes' are Madrid's most famous tapa, born in the capital's bars of the 1960s — where each one still guards its sauce recipe like a state treasure. The sauce is called 'brava' because it has temperament. All of Spain argues over the right recipe; there is agreement on one thing only: no tapas night is complete without bravas.
