The story
The legend leads to the railway construction of the 19th century: as the line from Lima to Huancayo was driven through the Andes — to this day one of the highest railways in the world — women from Huancayo sold the workers boiled potatoes with a creamy sauce of fresh cheese and ají amarillo. 'Papa a la Huancaína': potatoes in the style of the woman from Huancayo. By the way: Peru is the cradle of the potato — over 3,000 varieties grow in the Andes.
