The story
The world dish from Valencia: born in the Albufera, the rice-growing wetlands at the city gates, where field workers cooked rice over open fires at midday with whatever was at hand. 'Paella' is actually the name of the flat pan (from the Latin 'patella'). The greatest prize: the 'socarrat', the lightly toasted rice crust at the bottom. In Valencia, Sunday paella is a family sanctuary — with us it comes for two or more, as it should: paella is for sharing.
