The story

Galicia is Europe's mussel pantry: in the rías, the fjord-like arms of the Atlantic, mussels grow on ropes beneath wooden rafts — the 'bateas'. Nowhere else in Europe are more harvested. Steamed in white-wine salsa, they unfold everything the Atlantic water and patience gave them.
