The story

The most famous child of Peruvian-Chinese cooking: Cantonese immigrants brought the wok and soy sauce to Lima from 1849 — where they met beef, red onions, tomatoes and ají. The 'saltado' (jumping) describes the wok technique over the highest heat. The symbolism is right on the plate: potatoes from the Andes and rice from Asia, side by side. Two continents, one dish — and one of Peru's most beloved.
