The story
A happy accident of culinary history: French star chef Michel Bras developed the concept of the liquid centre in 1981 — while New Yorker Jean-Georges Vongerichten claims the invention through a cake simply baked too briefly. The dispute continues to this day. Warm chocolate, liquid heart, cold ice cream: the contrast makes the magic.
