The story
Peru's most famous sauce, born alongside the railway construction to Huancayo in the 19th century, where women served the workers potatoes with a cheese-chili cream. Ají amarillo — the yellow chili that gives Peruvian cooking its colour — meets fresh cheese. Creamy, gently spicy, and it goes with almost everything. Peruvians have known that for a long time.
