The story

The chorizo owes its soul to the Americas: only when the pepper reached Spain after Columbus and became smoked pimentón did the sausage gain its red colour and smoky aroma. With us it is flambéed in Rioja red wine — a tradition from the northern wine regions, where sausage and wine have always belonged together.
