The story

Al ajillo' — tossed in garlic — is one of the oldest preparations in Spanish tapas culture: hot olive oil, plenty of garlic, a splash of white wine. In Madrid's tascas the mushrooms traditionally sizzle in small earthenware dishes, the cazuelas — and bread for dipping is mandatory.
