The story
Two stories surround the causa: one leads to the Quechua word 'kausay' — life, nourishment. The other to the War of Independence, when women in Lima gathered potatoes, layered them into cold towers with lime and ají and sold them 'for the cause' — 'por la causa'. A dish that helped finance freedom. To this day, the yellow potato tower with ají amarillo remains one of the most elegant classics of Peru's cold kitchen.
