The story
From 1849 onwards, around 100,000 Cantonese contract workers came to Peru. When their contracts ended, many opened food stalls in Lima — the birth of 'Chifa' cuisine, whose name traces back to Cantonese ('chao fan': fried rice). Arroz chaufa is its heart: rice in the wok over the highest heat with egg, soy sauce — 'sillao' in Peru, from the Cantonese 'si yau' — and fresh ingredients. Chinese technique, Peruvian soul.
