The story

All i oli' — garlic and oil, nothing more was in the original recipe: the Catalan ur-version has been emulsified in a mortar since Roman times. Our homemade alioli comes with bread, olives and canchita — the toasted Andean corn found on every cevichería table in Peru. Spain and Peru in one bowl, perfect to start.
