The story
The word comes from Arabic, and the sweet travelled from Al-Andalus across the Atlantic: in Peru the delicate sandwich cookies were filled with 'manjar blanco' — the slowly caramelised milk cream that enjoys cult status all over South America. Butter-soft, delicately crumbly, with powdered sugar. For coffee or a pisco sour.
