The story

Even the name is history: 'albóndiga' comes from the Arabic 'al-bunduqa' — the little ball, literally the hazelnut. The Moors brought meatballs to Spain, where in tomato salsa they became a tapas institution; in every family the abuela guards her own recipe. Ours are homemade, in a spiced tomato salsa.
